About Dehydrated Garlic
A hardy, bulbous perennial whose compound bulb holds 6–34 cloves under a papery sheath. Native to West Asia and the Mediterranean, today China, India, the USA and Spain lead production. Garlic prefers cool weather and well-drained clay loam at 900–1,200 m.
Applications & Uses
Dehydrated for mayonnaise, salad dressings and meat preparations; raw garlic yields powder, salt, vinegar and bread. Across Asia it features in pickles, curry powders and curried vegetables. It is also antibacterial, fungicidal and highly nutritive.
