About Mace & Nutmeg
Mace is the dried reticulated aril of the fruit and nutmeg the dried seed kernel, both from an evergreen tree 9–12 m tall. Indigenous to the Moluccas, the major growing areas are Indonesia and Grenada, thriving in warm humid climates up to 600 m MSL.
Applications & Uses
Both are used as condiments, particularly in sweet foods. Ground nutmeg seasons meat products, soups, sauces, baked goods and puddings; mace flavours savoury dishes. Nutmeg oil is used in cosmetics and toiletries, with stimulant and carminative properties.
