About Green Cardamom
The dried ripe fruit of the cardamom plant, called the “Queen of Spices” for its pleasant aroma. India offers it as Alleppey Green Extra Bold (AGEB), Alleppey Green Bold (AGB) and Alleppey Green Superior (AGS), cultivated in the evergreen Western Ghats at 600–1,500 m.
Applications & Uses
Central to the Middle Eastern “Gahwa” coffee and prized by Japanese and Russian buyers. Used whole and ground in baked goods, curry powders and sausages; the oil and oleoresin flavour processed foods, cordials, perfumery and Ayurvedic medicines.
